Option one is book a spot on one of the departure dates throughout the year, but keep in mind the boat needs a minimum of 7 to guarantee a departure.
Alternatively, option two if you want to get everything locked in straight away, there are 3 departures fully guaranteed each season, so you can book knowing it will be running and get your flights all sorted.
